I added an extra cup of steel cut oats and a cup of rolled oats, and a bit more cinnamon too. I left out the maca powder, only because I don’t have any. This is vegan as written, but I think I would prefer the slightly sweeter taste of honey to the brown rice syrup – I’ll try that on the next go.
UPDATE: When I went back to look at the recipe, I realized that it originally called for rolled oats. How I saw "Steel Cut" oats instead is a mystery, but I’m happy that I read it that way! So for my proportions:
3 c. steel cut oats
1 c. rolled oats
1/2 c. chopped almonds
1/2 c. raw pumpkin seeds
1/4 c. chia seeds
1/4 c. unsweetened coconut
1 t. cinnamon (or more)
1/2 t. nutmeg
pinch of kosher salt
1/2 c. coconut oil, melted
1/4 c. brown rice syrup (or honey)
1/4 c. maple syrup
1 t. vanilla extract
Bake at 350.
